Once again, Mexico is present at the most important banquet and catering contest in the world, the International Catering Cup (ICC) , that will take place in Lyon, France .
This time, the Mexican team is composed by chefs Carlos Alberto Cano León and Paulina Aguilar Burgos , with chef Azari Cuenca Maitret as their coach.
So on January 26, the Mexican team will compete against the Canada, Brazil, Italy, Switzerland, Czech Republic, Luxemburg, France, Vietnam, United States, Singapore, and Madagascar teams, before a group of culinary experts , chef Frédéric Lejeune, from L'Atelier in Mexico City will be part of the jury.
Carlos Alberto Cano León
, the executive chef at Potzolcano , says that the International Catering Cup is a very demanding contest, with strictly measured times and where perfection is essential.
“This is a big challenge for us as we are competing against the best 11 teams in the world. We've had a very tough training to reach the competitive level that is required. This time, Bernard Le Prince , a chef with a Meilleur Ouvrier de France award , helped us train, and whose also one of the juries. That turned our training around, it placed us on a competitive level to be among the best in the world.”
