Despite its delicious flavor, tequila causes a negative effect on the body, called cellular oxidative stress, which takes place when we drink alcohol, as these beverages contain free radicals, which makes us older.

To fight this process, scientists from the University of Colima developed a process to extract antioxidants found in nuts and added them to tequila, in order to decrease the oxidative process produced by this beverage.

“The oxidative stress could cause cellular damage in the membranes and macromolecules, and it's also related to neurodegenerative disorders but the antioxidants found in nuts can delay the damage,” said one of the researchers.

In order to achieve this antioxidant effect, the scientists used pecan nuts, one of the most produced nuts in Mexico. They chose pecans because this type of seed has a high antioxidant content.

The interesting aspect of the project is that that same process could be applied to other beverages, without changing its flavor.

The modified tequila has been tasted by consumers in the region and has been approved, so they expect that this tequila will soon be available in the market.
