The president of Canirac Puebla, Ignacio Alarcón Rodríguez Pacheco , affirmed that the seasonal dish Chile en Nogada , is not only tasted in Puebla , but also in countries such as Germany, China, Japan, and the entire California strip in the United States .

In an interview, he stated that he was basing his assurance on reports from the National Chamber of the Restaurant and Seasoned Food Industry (CANIRAC) , referring to restaurants installed abroad and the social media.

He also said that, although the food industry in the world market is huge, Mexican producers have observed that, little by little, more people want to taste this famous dish from the state of Puebla. More and more Mexican restaurants around the world are trying to offer this dish in their establishments.

"Some service providers see that mole poblano is being sold well and they do not hesitate to offer chile en nogada. Though we shouldn’t forget that these are adapted dishes that don’t have the original nogada or other ingredients from the original baroque recipe, but they adapt it to make it easier to cook,” he expressed.

In the case of Mexico City , Rodríguez Pacheco indicated that this year the Canirac Puebla estimates to sell 2 million 750 thousand chiles en nogada, of which 20 percent is sold in the capital of the country, along with fruits and poblano ingredients, through agreements signed between restaurants from Puebla and those based in the capital.

"We are working on achieving a designation of origin for chiles en nogada in Puebla, just as we did with mezcal. It has been a complicated process because of all the products needed to cook chile en nogada, but fortunately, all these products can be found in Puebla," he claimed.

"Once the denomination of chile en nogada is achieved, it will be possible to protect this dish at a national level and later on, worldwide. With some luck, we’ll have the denomination of origin by December ," he noted.

Ignacio Alarcon Rodríguez Pacheco invited the general public to participate at the on August 12 , from 10:00 a.m. to 6:00 p.m ., at the Colonial Room of the Municipal Palace of the Magical Town of Zacatlán .
